Churro Cheesecake Cookies

Ingredients:
For the Dough:
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking powder
½ tsp salt

For the Cheesecake Filling:
8 oz cream cheese, softened
¼ cup granulated sugar
1 tsp vanilla extract

For the Cinnamon Sugar Coating:
1 cup granulated sugar
1 tbsp ground cinnamon

For the Caramel Sauce (optional):
1 cup caramel sauce

Instructions:
1️⃣ Prepare Dough: Cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Gradually mix in dry ingredients.
2️⃣ Cheesecake Filling: Beat cream cheese, sugar, and vanilla until smooth. Transfer to a piping bag.
3️⃣ Shape Cookies: Preheat oven to 350°F (175°C). Form dough into balls, flatten, fill with cheesecake mixture, and enclose.
4️⃣ Coat: Roll each cookie in cinnamon sugar mixture.
5️⃣ Bake: Bake cookies for 12-15 minutes until golden. Cool on a wire rack.
6️⃣ Serve: Drizzle with caramel sauce if desired. Enjoy!
