Description:
This classic chocolate pie is rich, creamy, and filled with deep chocolate flavor. With a smooth and luscious filling topped with whipped cream, it’s a decadent dessert that’s easy to make and perfect for chocolate lovers.
Ingredients:
- 1 pre-baked 9-inch pie crust (homemade or store-bought)
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 3 cups whole milk
- 4 large egg yolks
- 1 cup semi-sweet chocolate chips (or chopped chocolate)
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
Optional Ingredients:
- 1/2 teaspoon instant espresso powder (to enhance chocolate flavor)
- Whipped cream, for topping
- Chocolate shavings or cocoa powder, for garnish
Instructions:
- Prepare the Pie Crust: If making from scratch, bake the crust according to your recipe. If using store-bought, follow the package instructions for pre-baking. Set the crust aside to cool.
- Make the Filling:
- In a medium saucepan, whisk together the sugar, cornstarch, and salt.
- Gradually add the milk, whisking to combine. Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble (about 5-7 minutes).
- In a small bowl, whisk the egg yolks. Slowly pour about 1/2 cup of the hot milk mixture into the egg yolks, whisking constantly to temper the eggs.
- Pour the tempered egg yolk mixture back into the saucepan, stirring constantly. Continue cooking for 2-3 minutes, until the mixture is very thick and smooth.
- Add Chocolate, Butter, and Vanilla:
- Remove the saucepan from heat and add the chocolate chips, butter, and vanilla extract. Stir until the chocolate and butter are fully melted and the mixture is smooth.
- Pour and Chill:
- Pour the chocolate filling into the prepared pie crust. Smooth the top and allow the pie to cool slightly at room temperature. Then, cover and refrigerate for at least 4 hours, or until fully set.
- Garnish and Serve:
- Before serving, top with whipped cream and garnish with chocolate shavings or a sprinkle of cocoa powder, if desired.
Tips for Success:
- Temper the egg yolks carefully to avoid scrambling them. Adding a small amount of the hot milk mixture to the yolks before adding them to the pan helps keep the filling smooth.
- Use quality chocolate for the best flavor. Semi-sweet or bittersweet chocolate works well.
- Let the pie set in the refrigerator for at least 4 hours, or overnight for the best texture.
Serving Recommendations:
- Serve with fresh whipped cream for a light, airy contrast to the rich filling.
- Pair with a hot cup of coffee or a cold glass of milk.
